What is Chef?

The chef will do the whole process to prepare and finish the food.

  • Create a menu, choose the appropriate food and ingredients, make preliminary processing of cooking by various skill methods, decoration
  • In charge of calculating costs, advising customers
  • Preserving food, directing the coordination of activities to ensure the food is completed on time and in accordance with quality requirements as well as training
  • Observing other cooking staff

In large units such as restaurants, hotels each chef often specialize in special foods such as side dishes, fish dishes, desserts or specialize in different cuisines such as France, Italy, China…

Graduates of the chef sector can easily find job such as in restaurants, hotels, resorts, cafeterias of hospital or companies as well as in specialized companies providing catering services.

The content of the training program

The vocational training program in Chef according to the standard of German DIHK includes the following main contents:

  • Preparation, preliminary processing and processing of fresh and dried food, canned goods
  • Work standards in the kitchen and serving area
  • Using the devices, appliances in the kitchen
  • Manage and arrange warehouse supplies
  • Work planning
  • Workplace safety
  • The rules of ensuring food hygiene and safety
  • Create menu, advise customers

Necessary abilities

  • Dexterous, like cooking
  • Have a good aesthetic eye, sensitive to taste
  • Diligent, willing to learn
  • Ability to work in team and in high pressure environment.

Training time

The training program takes 3 years.

Certificate

After graduation, the apprentices will be handed German DIHK-AHK Vietnam certificate from German Chamber of Commerce and Industry (AHK Vietnam).
